Chinese Wonton Soup (Chinese Style Cooking Recipe) Stuffed with Pork Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. A wonton (also spelt wantan, or wun tun in transcription from Cantonese; Mandarin: húndun or húntun) is a type of dumpling commonly found in a number of Chinese cuisines. Ingredients: 20 Wonton Wrappers 50g Celery 100g Minced Pork 1 Spring Onion 2g Ginger Pinch White Pepper 1 Tsp Light Soy Sauce 1 Tsp Cooking Wine 1 Tsp Oyster Sauce ½ Tsp Sesame Oil 1 Tsp Cooking Oil 20g Seaweed 50g Cucumber 1 Litre Chicken Stock Small Bunch Coriander Salt to Taste Method: 1. Finely chop the spring onions and ginger 2. Roughly chop the coriander 3. Thinly slice the cucumber, then cut into thin threads 4. Place the minced pork in a mixing bowl 5. Add half the chopped spring onions, ginger, salt, white pepper, oyster sauce, soy sauce, cooking wine and cooking oil 6. Mix all ingredients together, then leave to marinate 7. Meanwhile, boil 300ml of water in a saucepan, blanch the celery for 2 minutes 8. Remove celery from pan, drain and cool 9. Finely chop the celery and then add into the meat mixture 10. Add the sesame oil and mix well – this is the Wonton filling 11. Take one sheet of the wonton wrappers, place about 1Tsp of the filling on the centre of the wrapper 12. Wet the edges with water Fold the wrapper in half away from you, press to seal the edge 13. Bring the two corners near to you downwards till they meet, press to seal them together 14. Place onto a dusted surface or dish, repeat with the rest 15. Bring the chicken stock to boil and then add seaweed, boil for a minute 16. Add spring onion and ginger, boil for a minute 17. Add the wontons and gently stir, boil for 4 minutes till the wontons are floating 18. Add half the cucumber and coriander, gently stir 19. Ingredients: 400g Salmon Fillet 10g Ginger 4 Cloves Garlic 10g Coriander 2 Tbsp Honey 1 Tbsp Rice Vinegar 1 Tbsp Chilli Sauce 1 Tbsp Light Soy Sauce ½ Tsp Sesame Seeds Salt to Taste Method: 1. Finely chop the garlic, ginger and coriander 2. Place the salmon fillets in a mixing bowl 3. Add garlic, ginger, rice vinegar, chilli sauce, soy sauce, honey and salt into the bowl. Mix well and leave to marinate for 20 minutes 4. Heat 2 Tbsp oil in a frying pan 5. Place the marinated salmon into the pan, cover the pan and cook for 1 minute on medium heat 6. Remove the cover, pour the sauce used for marinating, fry for 2 minutes each side till salmon is cooked 7. Season with 2-3 tsps salt, 1 tsp garlic powder and black pepper. Add about 1 cup of water and whisk Add 1 tsp of soy sauce and chicken cubes to batter Stir chicken cubes into batter and allow them to sit Chop up 1 small onion, 1/4 red and green bell peppers into large square shaped pieces as shown in video Cut 1 pineapple up into small pieces Place wok over high heat... add tbs of 2 tbs oil to wok.... and add vegetables and cook for 1 minute then sit aside in a bowl To a bowl add lots of flour, about 2 cups Drop chicken cubes into the flour and coat again, Add 2 cups of oil to wok and place over medium high heat...once the oil is hot after 2 minutes.... shake off excess flour from each chicken cube then add to hot oil and fry them for 7-8 minutes or until golden brown and crunchy. Fry a small amount of chicken at a time.... Once chicken done sit aside on a paper toweled plate SWEET N SOUR SAUCE Stir together 1/4 cup of water and 1 tbs of cornstarch to create a slurry Add 1/3 cup of apple cider vinegar to a pot along with 10 tbs of pineapple juice, 2 tbs ketchup, 1/2 cup of brown sugar and 1/2 tsp of salt Turn fire onto low heat... once come to a boil add slurry... and cook until thickens about 45 secs Make sure not to let sauce become to thick, cut fire off before it gets too thick Place fried chicken and vegetables back into wok.... coat with sweet and sour sauce, make sure not to toss too vigorously... be gentle. Chinese Peking Duck Pancake (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 250g Plain Flour 120ml warm water Half Cucumber 4 Spring Onions 4 Tbsp sweet bean sauce or plum sauce Sliced Peking roast duck Method: 1. Cut the cucumber and spring onions into 2 inch long threads. 2. Place flour in a mixing bowl, gradually stirring in the water with a fork or chopsticks. 3. Knead into a smooth dough, cover and leave to rest for an hour. 4. Boil 1 to 1.5 litre of water in the steamer – do not remove the steamer from heat. 5. On a dusted surface divide the dough into 12 equal sizes. 6. Roll each dough ball into about 1mm thin pancake and place in the steamer. Cover with lid and steam for 1 – 1½ minute. 7. Roll another one and then place on top of the one in the steamer, place the lid immediately and steam for 1 – 1½ minute 8. Repeat this process until all the pancakes are made. Steam for 5 – 8 minutes until cooked. 9. Remove from steamer onto a dish – cover to avoid drying out. 10. Spread 1 Tsp of sweet bean or plum sauce on the pancake, add the threaded spring onion, cucumber and sliced duck. 11. I paid for this tour, but they did a great job and I would recommend them. Kunming, Yunnan, China - Kunming is the capital and largest city in Yunnan province China. So I was excited to explore the local market in Kunming and eat as much street food as possible! Here are all the Chinese street food dishes we ate throughout the market: Rice pudding - 5 RMB ($0.76) - This was slightly fermented, and sweet, like a rice alcohol pudding. It was pretty good, but quite sweet, so I couldn’t eat that much of it. Dumpling - 1 RMB ($0.15) - I saw these dumplings sizzling and hissing and there was no way I could walk by without trying one. Stuffed inside were leek and egg. They were a little on the oily side, but delicious. Whole duck - 20 RMB ($3.03) - Yunnan is famous for roast duck, and there’s a version that’s comparable even to Beijing style. Style I was excited to find a stall that at the market that specialize in Yunnanese roast duck. It was delicious and the owners were very friendly as well. Pickled pears - 5 RMB ($0.76) - This was an interesting snack, and supposed to be very healthy and good for digestion. Drink - 2 RMB ($0.30) - This drink was incredible sweet, but refreshing. Tofu Noodles - 5.5 RMB ($0.83) - Another extremely popular Chinese street food snack at the market was tofu noodles - I’ve had tofu and noodles, but not really mixed before. It was a little plain and starchy, but from all the sauces, it was taty. Rice balls - 5 RMB ($0.76) - We also tried sesame rice balls which were delicious. Jacuzzi braised ½ chicken - 15 RMB ($2.27) - This was one of the highlights of the market for me, mainly because the owner was so friendly and his giant jacuzzi of boiling chickens was amazing to see! The chicken was a little bony, but flavorful. Yellow soybean porridge - 3.5 RMB ($0.53) - As we were leaving the market, we stopped for one last bowl of soybean porridge to eat with youtiau, Chinese donuts. I wasn’t expecting to like it as much as I did, but it was delicious. It was very warming and hearty. Finally to complete this Chinese street food tour in Kunming, Jerry and I, along with his family ate Chinese Yunnanese bbq. It was tasty and a great way to end this amazing day of street food. Fresh white fish is best-suited for this recipe. You can have it all year as this steamed fish recipe is simple to prepare after a hard day at work. In many Chinese families, steamed fish recipes are always listed on top of their most cooked recipes. Steamed fish with ginger and spring onions is one of the easiest and best steamed fish recipe out available. There are many reasons why steaming the fish is preferred over other methods of cooking it. Firstly, it is much healthier and secondly, most of the nutrients of the fish are retained. Ensure that the fish is fresh, of course! ### Tips for authentic gravy The main flavours to the gravy is the soy sauce and the hint of sweetness which comes along with it. Using Chinese light soy sauce would be the best. Additionally, the gravy is sweetened with rock sugar instead of regular sugar. Rock sugar is very subtle in sweetness. Although you may substitute it with regular sugar, the sweetness of rock sugar is best with this steamed fish gravy. ### Which fish should I steam? In the video, I used Seabass but if you prefer other types of fishes, I would recommend that you choose white fish like cod, grouper or bream. Fishes like salmon can be used but it does have a stronger taste to it. ### Steaming fish fillet instead Instead of steaming the whole fish, you may steam fish fillet which will work the same. I enjoy steaming thick cod fillet which would work well with all steamed fish recipes such as Cantonese steamed fish or Teochew steamed fish. RECIPES on www.nyonyacooking.com ### Is there a non-alcoholic substitute for Shaoxing wine? No. Shaoxing wine is added for its sweetness. While most would advise some apple juice as a substitute, I highly advise against it. Apple juice will spoil the taste of the dish, making it slightly tart in taste. If you do not want to have alcohol in this recipe, simply omit it as the main flavour in the gravy comes from the soy sauce. ### Why is fish served during Chinese New Year? It is considered auspicious to have fish served during the reunion dinner, which takes place a day before Chinese New Year as the pronunciation of fish in Chinese (“Yu”) sounds similar to the word surplus. Hence, having a whole fish to begin the year signifies the start of a new year with surplus and abundance! Despite being a fairly easy dish to prepare, the flesh of the fish will be tough if it is steamed for too long. Depending on the size and thickness of the fish, steaming a fish normally takes **around 15 to 20 minutes**. Turmeric Lemon Rice (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 100g Cooked Cold Rice 1 Onion ½cm Ginger 1 Spring Onion 1 Clove Garlic 2 Tomatoes Small Bunch (20g) Coriander 1 Tbsp Ground Turmeric 1 Tsp Ground Coriander 1 Tbsp Lemon Juice Salt to Taste Method: 1. Finely chop the onion, ginger and garlic. 2. Finely chop the coriander and spring onion. 3. Dice tomatoes into small cubes. 4. Place the tomato in a bowl and mix with spring onion, coriander and a small pinch of salt. 5. Heat 2 Tbsp oil in a wok. 6. Add ginger, garlic, onion, ground coriander, turmeric and fry for 2 minutes. 7. Add rice to the wok and stir-fry for 2 minutes. 8. Drizzle lemon juice, add salt and stir-fry for further 5 minutes until the rice becomes fluffy and heated through. 9. Transfer onto a dish, top with the tomato mixture. 10. And serve. It has long been popular in North America and Europe, where it is stereotypically considered a component of standard Chinese cuisine. It does in fact originate from China, and is now also used in some American (also American Chinese) and European cuisines. Some authors say that the original sweet and sour came from the Chinese province of Hunan,but the sauce in this area is a weak vinegar and sugar mixture not resembling what most people, including the Chinese, would call sweet and sour. Many places in China use a sweet and sour sauce as a dipping sauce for fish and meat, rather than in cooking as is commonly found in westernized Chinese cuisine. This style of using sauces is popular amongst Chinese who tie certain sauces to particular meats such as chili and soy for shrimp and vinegar and garlic for goose. There are, however, some dishes, such as the Cantonese sweet and sour pork or Loong har kow (sweet and sour lobster balls), in which the meat is cooked and a sauce added to the wok before serving. Not all dishes are cooked; some, such as "sweet and sour fruit and vegetable" salad from the eastern regions of China, also find their way in Chinese cuisine.This dish combines salad vegetables such as cucumber, tomato, bell pepper, and onion with a mixture of pineapple (or pear), vinegar, and sugar to make a cold served dish. http://www.howtocookgreatfood.com In China traditionally the sauces are made from mixing sugar or honey with a sour liquid such as rice vinegar, soy sauce, and spices such as ginger and cloves. We get to check out the contents of some old suitcases. Later we visit the area where my mom lived until she was 5 years old. While at the village, a relative's son invited us to lunch in nearby Chiak Hom Town, also known as "Chikan" Town. This town is the former Market Town in the area. We go to a traditional Chinese restaurant that serves Chinese Village Style Cooking. Some of the dishes are similar ones served in Chinese restaurants in North America and throughout the world. Other dishes are not so familiar.

Water spinach is easy to cook. Just stir fry ginger and garlic to bring out the natural flavour of this Chinese vegetable. Water spinach is also called ong choy, kang kong, kong xin cai in Mandarin. Also known as tung choi, tong choi and swamp cabbage. The simple recipe is below: Stir Fry Water Spinach 1 lb. water spinach 2 tablespoons cooking oil 1 teaspoon sliced ginger 1 teaspoon chopped garlic 1/2 teaspoon salt 1/2 teaspoon chicken base or chicken flavour Wash water spinach in cold water. Rinse at least once. Tear or cut each stalk in half. Pinch and squeeze the hollow stalk to flatten. This allows better absorption of flavour from the ingredients. Let the water spinach drain in a colander. To stir fry water spinach, preheat a frying pan at medium heat. Add cooking oil. After a minute or two, add ginger and garlic. Add water spinach and stir fry briefly. Add salt and chicken base. Stir fry for 5 to 7 minutes. Serve on a nice plate. Enjoy!
