The scheme is run by the Food Standards Agency, in partnership with local authorities in England, Wales and Northern Ireland and can help you find out if the restaurant, takeaway or food shop you want to visit has good food hygiene standards. Some of our members are responsible for carrying out inspections of food businesses to check that they meet the requirements of food hygiene law. They give businesses a food hygiene rating, and then publish this information on the FSA website. In Wales and Northern Ireland, food businesses must by law display a sticker showing their rating in a prominent place in all entrances to the premises, but in England they do not have to display their rating. So, if you see a business without a hygiene rating sticker, you’ll have to decide if you want to eat or buy food from there without knowing the hygiene standards. SAM: Why is it important to have a mandatory food hygiene rating scheme in England like the one in Northern Ireland and Wales? KATE: So, having a mandatory scheme in England would mean that food businesses have to display their rating at the entrance to food establishments, as well as the ratings being available on the Food Standards Agency’s website. Without a mandatory scheme, businesses that are issued with a hygiene rating of 0, 1 or 2, there is a temptation that they wouldn’t display those ratings and there is nothing that anyone can do about that. It means a consumer can’t make an informed choice about where they eat. SAM: What would be some of the challenges to setting up a mandatory food hygiene rating scheme in England? KATE: We see there are really four main challenges around setting up a mandatory scheme in England, and the first one would be the need for new legislation. For the scheme to be on the statute book, to be mandatory, there would need to be new laws made and for that to happen there needs to be a political appetite for it. So that’s really the main challenge. And then of course the other thing is we’d need to give some thought as to what a mandatory scheme might look like in England - would it be the same as the schemes already in place in Wales and Northern Ireland, or might it look a little bit different? Thirdly, for a mandatory scheme to be credible, we’d need to be confident that there are adequate resources available at a local level to issue ratings, so that’s a challenge. And finally, we need to be confident that the ratings are being issued consistently, so for example a business in the north of England would be issued the same rating as a similar business in London if they had the same hygiene conditions. So, there would be a need for consistency training for those that are actually issuing the ratings. While we recognise that the implementation of a mandatory Food Hygiene Rating Scheme in England would be challenging, we firmly believe that England should not be out of step with the rest of the UK. A mandatory scheme should, therefore, be introduced in England without delay.

Food inspector Mandy from Gravesham Borough Council is on the trail of a Chinese takeaway. Every food outlet in England, Wales and Northern Ireland is rated from zero to five with five being the cleanest. The takeaway Mandy inspects boasts a rating of four. But she finds fried chicken which has been left out of the fridge for six hours and a box which once contained raw, frozen food is now being used to store the cooked chicken. In the food lab Chris meets secretary Sharon Sanderson from Halifax, who suffered from a very serious case of salmonella poisoning. Sharon ordered chicken and noodles from a noodle bar in Manchester - a decision she believes led her to be hospitalised with kidney failure. Food inspector Russell from Reigate and Banstead Council visits a pizza delivery company where he finds fridges at the wrong temperature for food safety, a staff member washing his hands in the food preparation area and a box of chicken wings left underneath the pizza oven to defrost. While food inspectors concentrate on businesses, most cases of food poisoning happen in people's homes or workplaces. Our resident expert Ben visits the home of pet lover Linda in Tonbridge, Kent. Linda has a horse, a pony and a cat and treats them as her family. But not everyone is keen on Linda's love of animals - her daughter Faye refuses to eat at the house when she visits, because she doesn't think the kitchen is clean and she instead brings a packed lunch with her. And Chris visits pie factory Pooles of Wigan. Chris is given a guided tour to show him just how they make a perfect pie while also ensuring food safety and hygiene levels are maintained.

We all know the importance of eating healthy, but not everyone knows that the cookware you use to prepare your dishes is just as important as the food itself. Even the healthiest diet can result in severe health problems if your pots and pans are toxic. Find out which cookware you should avoid by all means for the sake of your own health and the health of your family. The non-stick properties of Teflon cookware are achieved with a coating of PTFE. This is a plastic polymer that, when heated above 572°F, starts to release toxins. These toxic fumes lead to flu-like symptoms called polymer fume fever, informally known as Teflon flu. Another chemical compound found in Teflon cookware is especially threatening since it tends to stay in the body (as well as in the environment) for long periods of time. Try cast-iron cookware instead. It even comes in non-stick varieties. It doesn't leak anything toxic into your food and is actually a nice natural way to increase your body’s iron levels. Though aluminum cookware is usually coated, the coating is prone to chipping, allowing the toxic metal to get right into your food. As for aluminum foil, using it while cooking is even more dangerous. In fact, there’s an established safe amount of aluminum the human body can manage daily, and that’s 20 mg per pound of body weight a day. When you wrap your food in aluminum foil and cook it this way, the amount of this substance that leaks into the food significantly exceeds the permissible level. Consider using glass cookware instead. If you’ve just enjoyed some fish in lemon juice or stewed tomatoes cooked in an uncoated copper pot and you find yourself suffering from extremely unpleasant symptoms (such as vomiting blood, light-headedness, yellowy skin, or gastrointestinal distress, among others) call 911 immediately. On Nov. 18, 2014, Consumer Reports released an analysis of levels of naturally occurring arsenic found in rice and several other grains, leading the magazine to recommend curtailing people's intake of rice and rice products. However, the study follows a far more comprehensive analysis by the FDA, with levels of very low risk, which led the agency to recommend that people not change their diets. Newham food hygiene officer Matt investigates 'beds in restaurants' - the alarming practice of workers sleeping in kitchens. He has found 12 cases of people living in kitchens in the past few years. Jenny, from the Chartered Institute for Environmental Health, says that anyone sleeping in a kitchen presents a health risk to any customer. It is estimated that there are more than one million cases of food poisoning every year in the UK. And almost half of these are the result of dodgy cooking by family and friends. Chris visits the Brixton home of Dave and Rich, who are cooking that Great British favourite, a roast lamb dinner, for their friends. Our resident expert Ben casts his eye over the kitchen and offers advice on how to cook the lamb and vegetables safely. Lamb can contain E. coli on its surface but properly searing the outside of the meat will kill any bacteria on the surface. But when Ben inspects the fridge he finds cheddar cheese which is way past its sell-by date, mouldy mushrooms and a bag of salad which is swimming in water, all of which need to be binned. Matt visits a farmers' market in Taunton, Somerset, along with Carol, the head of training at the Chartered Institute of Environmental Health. Matt meets some of the stallholders and quizzes them on the lengths they go to in order to store and sell their produce safely. And he visits a farm in Devon, where artisan producer Donna has been rearing her pigs for nine years. She also makes pork salamis which are dried and not cooked. Matt tries his hand at making a salami sausage and learns about the ingredients Donna uses to preserve the meat.
