Which is better? Let's find out: 1. Can they each whip a single egg white? 2. How well do they each whip two egg whites? 3. How do they compare making a single batch of cookies? The mixer on the right has been made by the same company since 1940. They just keep changing the name. Now it's called "Ankarsrum", the name of the town in which it is manufactured. My conclusion: The KitchenAid cannot out-perform the machine on the right. Plus, the machine on the right can do things the KitchenAid cannot. Case in point: Make dough for challah bread. (It's a Jewish bread with eggs. The protein in the eggs make it super stiff.) Challah dough killed my first KitchenAid. Smoke came out, the machine got scorching hot. And then it died for good. I bought the Magic Mill to replace it and it's been a trooper ever since. I bought the KitchenAid you see here as a replacement for the one that died -- for things other than making challah. After running the tests in this video, I wonder why I bothered. After finishing this video, I made bread dough in the Magic Mill/Ankarsrum. It turned into a comedy of errors. Part 2 shows the continued adventures, using sandwich bread dough... which is easier on the mixer than the challah dough made in Part 1. Plus, I learned from Part 1, so made different mistakes this time. Now, seriously people, the only reason to watch this is if you own or are considering buying an Ankarsrum mixer. Otherwise, life is too short to watch a mixer spin around for another 17 minutes. Go do something better with your time. On the other hand, if you have one of these mixers or are considering shelling out the many dollars it costs to buy one, you will benefit from watching this. That's why I'm posting it for you. You'll be less worn out watching me make mistakes than if you spend time and effort making them for yourself. ============= What follows simply repeats what I wrote for Part 1: ============= For a lovely and informative video on making bread with this machine, watch this: http://youtu.be/zMB4CVG5fLs That's not what I did here. Instead, in my ignorance, I believe I committed every major error with this machine. I present the whole long disaster here to my eternal shame so that you can learn from my stupidity and do not fall into the same wayward path. I have concluded that my major mistakes were: 1. Never remove the scraper. There won't be anything to flip the dough over and it will simply ride around in circles, merry-go-round style. 2. Use the roller, not the dough hook -- although there is some debate about that. Different people use different attachments. I've seen both used successfully in YouTube videos. Start with the roller. More sources recommend it. 3. Don't add extra flour needlessly. 4. Don't load the bowl higher than the top of the ribbed part of the roller. It can't perform its work if the dough climbs its neck. Here's a video of a lady loading the bowl to the top, which proves that, yes, this mixer can handle large quantities. But she's making cookies and that's a different animal. Bread dough is alive and fights you in a way that cookie dough doesn't. http://youtu.be/L1euZNh4zPE I think you are better off reducing the quantities when making bread dough. You need the extra work room. Be aware that in this video, I'm making challah, which is a very difficult dough. It literally killed my KitchenAid. Smoke. Flames. The whole she-bang. Dead KitchenAid. For power and performance, you need one of THESE machines. Challah doesn't kill it. Not even my overloading it with challah killed it. It's one truly fine machine! Word of advice: Don't make bread dough in such great quantities that you can't bake it when it is ready to go in the oven. I made several large batches of dough, then didn't have enough room in the oven. Many loaves had to wait their turn and passed their prime. You really are better off making several smaller batches. You can then work your timing so it spaces them far enough apart that they can each enter the oven at the peak moment. (I know, it's like "Duh, you moron. Isn't that obvious?" Yes, it is. But if you get obsessed with playing with the mixer, you can overlook such obvious facts.) Ah, well. Live and learn. Or just watch this and learn from a screw-up. It's faster.

A DLX mixer from I think the early 80s makes mashed potatoes. There were a couple of 1" lumps but not bad! I'm guessing the new one - Ankarsrum Original - will probably mash it all up even better. If it's notably different I'll share a video of it - maybe add it to this video.

This shows my Electrolux Assistent (sic) mixer preparing Peter Reinhart's bagel dough. This is a 55% hydration dough that is beyond most other mixers—if you're watching this it's because you know that, because you know how difficult this dough is to work with, because you want to see if there's anything out there that will handle it. There is. The Electrolux does a *beautiful* job with bagel dough. Note that I'm using the roller attachment, not the dough hook. The dough hook actually doesn't work as well. This is a complete video, start to finish, unedited. I could've edited it, spliced it at 1-minute or 5-minute intervals, but (1) that would take time, and (2) I figure you, gentle viewer, can do your own fast-forwarding. Time 0:00 shows the sponge after it has risen two hours. I add malt powder, flour, salt, yeast, and let the mixer do its thing. At 06:04 I adjust the knob on the roller thingy to make it bounce less. (It's usually necessary to adjust it once or twice during the kneading. Other than that, there is no involvement on my part.) By 08:00 the dough has come together nicely but is still lumpy; the kneading time from then until 16:00 serves to soften the dough. Note that this mixing process does not heat the dough. Dough remains at room temperature. (For comparison: a very nice Italian mixer I've tried does a great job in only 10 minutes but leaves the dough at about 93⁰F.) In short: I love this mixer. Enjoy. I hope this helps someone.

Pizza dough. 800g All Trumps hi-gluten flour. 62% water. 1 teaspoon IDY 0.4%. 1 tablespoon oil 2%. Salt 2%. 2 teaspoons non-diastatic malt 1%. 1 teaspoon Molasses (not blackstrap). Mix, ball, frig for 3 days, counter for 1-2 hours before opening balls. Makes five 12-13 in pizzas.

Test run with the Ankarsrum Assistent using a small bread dough (750g total ( 1 loaf) and the "roller" accessory. part 1 is with mixing of ingredients and start of the kneading process. See part 2 for the rest of the kneading process (https://youtu.be/zRJ8N1s9kIo). Wet dough with 80% moisture content. Consist of 100% white flour, 80% water, 2.2% salt, 2.4% fresh yeast, 5% sour dough. Video mainly made for own purposes, so sorry about quality of video and audio

An Ankarsrum mixer mixing initial dough to a shaggy mass

The first step to mixing is to knead the ingredients until they form a shaggy mass (the flour has been hydrated). After this brief initial mix the shaggy mass is rested for a half hour or so. This rest enables the flour to more thoroughly hydrate. The hydrating of the mix will make the kneading easier after the rest.

1 dozen eggs 1 lb butter, softened 3 lbs peanut butter 2 lbs brown sugar 4 cups sugar 1 Tsp white corn syrup 1 Tbs vanilla 8 tsp soda 42 oz oatmeal quick kind 12 oz chocolate chips 16 oz M&M,s Mix all but last 3 ingredients until smooth with hand mixer in a super large bowl then add oats and candy and chips by hand. I use a icecream scoop (1 Tbs) to measure out dough. Place on greased cookie sheet and Bake at 350 for 10 minutes or until golden brown or 325 for 12 minutes. Cool for 2 minutes before transfering off pan. I halved the recipe sometimes and it works wonderfully! Don't eat too many at one time.
